Looking to remove Make, Model & Serial Number from Estimate/ Install Job Invoice when client ( or office) print out. We were able to get the Model off but was told we can not remove the Make or Serial numbers

Yes we have done that already. Management is looking to get rid of the Make ( Manufacturer) & the serial number from invoice as well.

My understanding is there is a setting your CSM can enable on your account that would hide the equipment model number from customer invoices. Here is a link to the video on how the setting works.
