What are the benefits of creating a project vs not creating a project?

Does a project get created automatically when an estimate is sold? Or is it automatically created when the estimate gets attached to a job?

We use projects for all installations.  We manually create them when an estimate is sold.  We have a review process by our service manager where he determines the number of technicians and any additional information they may need.  We schedule, collect downpayment, and manage the installation within the project.  It also helps us keep track of multiphase jobs, though we do not have very many, it prevents those jobs from slipping through the cracks.  

We also use it for specific types of services.  We do testing of domestic wells for real estate transactions.  We create a project if any of the testing comes back as bad.  That way we keep all the information together in one location.  It also assists when filtration equipment is sold to treat contaminants in the water or if a pump needs to be replaced.
