When a tech bids a job and gives the "good, better, best" options on an estimate and emails that to the customer, is there a way to be notified that the customer chose to move forward and have work done?

Hi there,

You can set up an Alert for Sold Estimates under integrations. (Settings>Integrations>Alerts) This way you can have the system notify the appropriate people via email, sms or both that the customer has accepted the estimate. 

You can also set up Alerts from the same place for Clients viewing and/or signing your online estimates.
