The Manual invoice is also great for thechs to be able to browse the price book and become more familiar with it.

You can do this through a manual invoice. If your tech clicks their picture in the top right, they will see an option for a manual invoice towards the bottom. This is meant for that exact scenario. Something to keep in mind is this will be deleted when your tech downloads their pricebook, if they do not attach it to a job.
