I have management companies as customers. When another management company takes over some of the the locations--how do I make that change on the customer side w/o changing ALL of the locations to a different customer????

You would need to go to each location you are needing to move to the new management company, click the edit pencil and update the customer field to tie the location with the new bill to customer. The history of previous invoices etc will still show that they were paid by the previous management company.
