Recently had a technician create an estimate for a job that was 2 days away........
Said he accessed it through the mobile dashboard and just hit the wrong day...and wrong job??
Permission options don't seem to address this so wondering if theres some advice out there for poor, old me.

This is absolutely not the intended thing to happen. Do you know if this was an isolated case or have you noticed other technicians create an estimate for a job that is scheduled for another date?
