If the technician sold it and it locks out your ability to unsell I have been doing the following:
- Duplicate the estimate
- Go into the invoice and delete the sold version (original)
- Go back to the opportunity screen
- Now if you mark it as sold, going forward you can simply unsell it if necessary.
That is the only way I have found. Possibly someone else has a better solution.

This works, At first, I thought it didnt sound right, but its the only way I have been able to unsell an estimate
