we have customers who occasionally overpay and are repeat customers so the payment is applied as an overpayment and then Service Titan creates a credit on the account. The problem I have is that when I try to use those overpayments, the "date" of the payment reverts back to the original payment date. For example, customer made overpayment of $500 on 11/7/22 and now has outstanding invoices totaling $357, but when if I try to apply the payment it shows the payment date of 11/7/22. Open to any feedback or suggestions - ST does not have a resolution - already tried that.

No, I don't like that either. Sounds like it would be a great idea for you to add though. I would vote for it.
