How do we go about removing or deactivating a customer or location tag?

To remove from a customer or location, click the Edit pencil on the customer/location record and remove the tag from that screen. To deactivate it from use anywhere in ServiceTitan, go to Settings > Tag Types, find the tag, click the check box and then click the Deactivate button at the top of the screen.

This is all correct.  Only thing I would add is ensure you have the permission in your Employee settings under Access to Admin category.
