Does anyone know of a report or where I can find KPI's for calls booked from Chat messages? This wouldn't be part of an SMS campaign, just regular people texting in to book.

The only way I know of is having a campaign specific for chats. We have ours labelled as "website chat" or something similar so that our CSR can click that when they chat in and book.
