Job incorrectly marked as "Completed"

Occasionally we have technicians mark a job as "Completed" when they should have marked it "Done for now"

Is there anyway to change the status from "Completed" to "Done for now"?

Yes, you can pretty easily do that by creating a new appointment on the job or by adding another assignment to the existing but closed appointment.  Either will give you a warning that doing this will reopen the job.  Which you use should depend on why closing the job wasn't right in the first place.

If you create another appointment, won't it notify the customer?  I don't want to have to toggle the job notifications on and off all the time
