It would be nice to know where in ST each CSR was during each hour. Like this CSR was in 5 customer accounts during this hour or was creating a report,  or in unsold estimates, or follow up tab, or in dashboard, or on 10 outbound calls so you can see what they are doing with their day and how often they are utilizing service titan and where. Maybe they aren't spending enough time in the follow up tab for instance to book maintenances or they are in unsold estimates all the time which is why they are converting them. This could be helpful too when people work remotely, so you can see their productivity.

The office audit trail report will give you some of this, but if they don't take specific action it won't record anything. It's something, but it's not everything.

I think in the new reports in 2.0 you can make a report that goes by the hour but you might have to create a new report in the call tab. That would be by hour if this helps

Search in reports for Office Activities Report for the prebuilt report on that template, or create a new report based on the Office Audit Trail dataset.

I would love Service Titan to have this sorta "Log" like feature where it keeps tracks of what users are doing and if they do, do something it shows in the logs. For example there is sorta a log system for when you adjust overall pricing in Pricebook Pro but other than that there isn't really anything like it yet.
